Passion, Persistence, and Pasta!

Born in the Marche region of Italy’s Adriatic coast, Chef Fabio Trabocchi and his Spanish wife and business partner, Maria Font Trabocchi, are widely celebrated among Washington DC’s, and the nation’s, leading restaurateurs.

Since they first met (in a Washington, D.C. restaurant, of course) in the mid '90s – Maria as a student of international relations and Fabio as a chef – the Trabocchis have passionately pursued the goal of creating a world class hospitality organization offering the finest dining experiences in the world. The Trabocchis design restaurants as an extension of their lifestyle, creating spaces that they would like to visit.

The Trabocchis’ growing restaurant group has brought them many accolades, yet their inspiration remains grounded in family traditions from Italy, Spain, and the U.S. From the Michelin starred fine dining flagship, Fiola, to the neighborhood pasta house, Sfoglina, the Trabocchis’ signature remains their uncompromising commitment to quality and making every guest feel special upon every visit.

Community & Philanthropy

Fabio and Maria Trabocchi are conscious of their role in the driving economic growth in the city of Washington, D.C. and are proud to employ more than 500 people in their five restaurants, many of whom started at entry level and have risen to be part of the management team. They are also active with numerous fundraisers and sponsorships in the community.

Fabio and Maria are involved with local government and agencies to promote development in the city, including the Penn Quarter Association, the Downtown DC Business Improvement District (BID), the Georgetown BID, the SW BID, Van Ness Main Street, and Destination DC, the city’s travel and tourism marketing organization, in addition to being members of the Restaurant Association of Metropolitan Washington.

The Trabocchis are committed to giving back to the community and supporting causes for which they feel a strong connection. For the last two years, Fabio and Maria have served as gala chairs for Refugees International. As immigrants to the United States seeking a better life for themselves, the Trabocchis understand the importance of the second chance that an organization like RI can provide for refugees in terms of provoking action in the form of relief and lifesaving support. In support of RI’s work, the Trabocchis donated $1 for every dessert sold at their seafood restaurant, Fiola Mare, to Refugees International. They are also supporting the conservation and advocacy efforts of the Potomac Conservancy, by donating a portion of the proceeds from cocktails at Fiola Mare and Del Mar. Maria also serves on the committee for Innocents at Risk, Children’s National, and Knock Out Abuse.

Since 2012, Fabio and Maria have supported Chefs for Equality, a program of the Human Rights Campaign, and Maria was asked to serve on the organizing committee for 2016.

Fabio Trabocchi Restaurants support the Careers in the Culinary Arts Program (C-CAP) to develop young talent for careers in the culinary and hospitality industry by hiring summer interns from local high schools in both culinary and pastry.

Fabio Trabocchi Restaurants also participate in the Oyster Recovery Partnership’s Shell Recycling Alliance, providing oyster shells to be cleaned, treated with baby oysters, and restored to oyster reefs in the Chesapeake Bay.



Fabio and Maria Trabocchi have forged partnerships with collaborators across various industries, all of whom share their desire to be purveyors of tasteful, elegant, and sophisticated experiences.
